2 Cups of diced Sihi Kumbalakayi / Pumpkin with or without skin
Salt to taste

1tsp Oil
1/2 Cup grated fresh Coconut
3 – 5 Red Chilies
1″ piece Tamarind
1/4 tsp Methi / Fenugreek Seeds

1tbsp Uddina Bele / Urad Dal / Black Gram Split

Method:
For the Masala:
Heat Oil and fry Red Chilies, Methi, Uddina Bele and Coriander Seeds. Grind with the other ingredients to a paste and keep it aside.

Steam Pumpkin for 5 minutes. Heat Oil and Mustard Seeds, when they splutter add Turmeric Powder, Hing, Curry Leaves, and Red Chili. Add the Masala paste and stir. Add the steamed Pumpkin and Salt and mix well. Add half cup water and cook for few seconds. Remove to a serving dish and serve with plain Rice or Indian Bread.

1/2 small red pumpkin, peeled, grated
2 cups wheat flour
1 tsp paprika
1 tsp dhana-jeera powder/coriander-cumin powder
salt to taste
1/2 tsp carrom seeds/thymol seeds/Ajwain/Owa/Ajmo
Water as needed
Oil for shallow frying
Wheat flour for dusting

1. Knead dough using all the ingredients. Use water sparingly.
2. Cover and let the dough sit for about 1/2 hour. The dough looks like below.
3. Make small balls and roll into rotis or theplas.
4. Shallow fry on the pan drizzling very little oil.
5. Wrap in a clean kitchen napkin till ready to use.

* 1 box(es) Betty Crocker Super Moist German Chocolate cake mix, prepared

* 1 tub(s) Duncan Hines Classic Dark-Chocolate Fudge frosting
* 2 cup(s) white-chocolate chips

Directions:
To Make the Cupcakes:
Place paper liners in a muffin pan, then fill each liner two-thirds full with prepared cake mix. Bake at 350°F for 15 to 20 minutes, then set aside until cool. Repeat process until you’ve baked 24 cupcakes.

1. Transfer frosting into a bowl, microwave for 10 seconds, and stir; repeat until thin enough to pour. Dip cupcake upside down into frosting, submerging the top but not touching liner to frosting. Let excess drip off before turning upright. Continue until all cupcakes are glazed.
2. To Make the Cake Topper: Microwave white-chocolate chips in a bowl for 30 seconds and stir. Continue to microwave in 20-second intervals until almost melted. Stir again until chocolate is completely melted. Pour inside a freezer bag with one tip snipped off to create a piping sleeve.
3. Line a cookie sheet with parchment paper. Slide spiderweb template underneath paper. To make each web, use piping sleeve to trace white chocolate along design, making sure to connect all lines. Repeat process until you’ve created 24 toppers. Chill them in refrigerator for 10 minutes. Then, using a spatula, remove webs carefully from parchment and position one on each cupcake.

Method:
* Cut squash in half from stem to point and remove seeds and strings. (To make this easier, pierce squash with a knife or fork and microwave a minute or two.)
* Place cut side down on lightly greased baking sheet with sides. Bake at 350F until almost soft but not mushy, 20 – 30 minutes.
* Remove from oven, fill with the following stuffing and bake again for 5 more min.
* Sprinkle some salt and pepper on top of squash.
* Let it stand for 2 min and serve hot!

Ingredients:
Onion – 1 med sized(chopped)
Carrots – 1/2 cup (chopped)
Celery or cucumber – 1/4 cup (chopped)

Garlic – 2 cloves (minced)
Seasoned bread crumbs – 1 cup
Eggs – 1 1/2 (2 whites & 1 yolk)
Crushed pepper – 1 tsp
Butter – 2 tbsp
Salt – to taste

Preparation of Stuffed Acorn Squash:
1. In large fry pan saute onion, garlic and mushrooms until soft.
2. Add carrots and celery or cucumber and saute again and cook with lid ON on medium heat.
3. When these are done add salt and crushed pepper.
4. Pour 1/2 cup of water and allow to boil.
5. Then add bread crumbs and cover with lid for 2 min.
6. Remove the lid and add the beaten eggs and scramble it. These eggs act as a binding agent for the stuffing mixture.
7. When this is done, stuff this warm mixture in cooked squash.

Food Cake


Ingredients

 1 cup(s) cake flour (spooned and leveled)
1/4 teaspoon(s) salt
12 large egg whites, room temperature
1 teaspoon(s) cream of tartar 1
1/4 cup(s) sugar 2 teaspoon(s) pure vanilla extract
Directions
Preheat oven to 350 degrees. Place flour and salt in a sieve set over a bowl; sift into bowl, and set aside. With a mixer, beat egg whites on medium-high until foamy, about 1 minute. Add cream of tartar; beat until soft peaks form. Continue to beat, gradually adding sugar; beat until stiff peaks form (see below), about 2 minutes. Add vanilla; beat to combine.
Gently transfer egg-white mixture to a large, wide bowl. In four batches, using the sieve again, sift flour mixture over egg-white mixture. While turning the bowl, use a rubber spatula to fold in the mixture by cutting down the center and coming up the sides.
Gently spoon batter into an ungreased angel-food cake pan with a removable bottom; smooth top. Cut a knife or small spatula through batter to release air bubbles. Bake until cake is golden and springs back when lightly pressed, 35 to 40 minutes. Invert pan; let cool in pan, 1 hour. Run a knife around the inside of the pan and around the tube to release cake, and unmold. Use knife to release cake from bottom of pan, and remove.

Ingredients:

4 large sweet potatoes
1/4 cup mayonnaise
4 ribs celery, sliced small
1 small red bell pepper, seeds removed and diced
1 cup diced (1/2-inch) ripe fresh pineapple
2 scallions, (use white and green parts), finely chopped
Salt and pepper to taste
1/2 cup chopped pecans
Chopped fresh chives, for garnish

Directions:

Wrap each potato in foil and bake in a 400°F oven for 1 hour or until tender. Cool until easy to handle. Peel andcut into 3/4-inch chunks.

In a large bowl, combine the mayonnaise and mustard. Add the sweet potatoes, celery, red pepper, pineapple, and scallions. Toss gently. Season to taste with salt and pepper. Cover and refrigerated until chilled, about 1 hour.

Just before serving, fold in the pecans and sprinkle with the chives. Serve chilled.

* Soak in water for 30 minutes.
* Drain completely.
* Melt the ghee in a pan, add the drained rice and saute for 5-7 minutes on a medium flame.
* add the milk and cook on a low flame till the milk is reduced to 3/4th its original quantity.
* Add the sugar and simmer further till the milk is reduced to half its original quantity.
* Garnish with nuts.

* 2 cups Flour
* 2 cups Sugar

Method:


1. Preheat oven to 350 degrees.
2. Grease and flour a tube pan.
3. Sift flour, salt, and baking powder and set aside.
4. Cream eggs and sugar. Add to flour mixture.
5. Bring milk and butter to a boil, then gradually add to mixture with vanilla.
6. Pour into prepared pan. Bake for 45 to 55 minutes.

Mutton Elaichi Recipe

INGREDIENTS:

2 lbs. Mutton
1 lb. Onion
10 nos. Cardamom
2 tsps. Black Pepper
Cilantro for garnishing
Salt to taste



DIRECTIONS:
Wash and put the mutton in cooker with onions and salt and pressure cook for 10 mins without water.
After the cooker has cooled down, open and put on large flame and dry up the water.
Then add ground pepper powder and elaichi.
Mix well then add a glass of water and keep on slow flame for 10 mins and it is ready to serve.
Garnish with cilantro and serve hot with rice or rotis.

Chicken Tikka Masala

Chunks of chicken are marinated in yoghurt and spices, cooked on the barbecue or under the grill, then served in a creamy tomato sauce. Perfect with basmati rice or warm Lebanese bread.

Ingredients

* 3 chicken breast fillets, cut into chunks
* 4 long skewers
* For the marinade:
* 250ml (1 cup) natural yoghurt
* 1 tablespoon lemon juice
* 2 teaspoons ground cumin
* 1 teaspoon ground cinnamon
* 2 teaspoons cayenne pepper
* 2 teaspoons freshly ground black pepper
* 1 tablespoon finely grated fresh ginger
* 2 teaspoons salt, or to taste
* For the sauce:
* 20g butter
* 1 clove garlic, crushed
* 1 green chilli, finely chopped
* 2 teaspoons ground cumin
* 2 teaspoons paprika
* 2 teaspoons salt, or to taste
* 250ml (1 cup) passata or tomato puree
* 300ml (1¼ cups) thickened cream
* 1 large bunch fresh coriander, freshly chopped

Preparation Method:

1. In a large bowl, combine yoghurt, lemon juice, cumin, cinnamon, cayenne pepper, black pepper, fresh ginger and salt. Stir in chicken, cover and put in the refrigerator for 1 hour.
2. Thread chicken onto skewers and discard remaining marinade. Cook the kebabs on the barbecue or under the grill until chicken is cooked through, about 5 minutes on each side.
3. For the sauce: Melt butter in a heavy frying pan over medium heat. Fry garlic and chilli for 1 minute. Add cumin, paprika and salt.
4. Stir in tomato passata or puree and cream. Simmer on low heat until sauce thickens, about 20 minutes.
5. Add cooked chicken and simmer for 10 minutes.
6. Transfer to a serving platter and garnish with fresh coriander
